Description: Architecture Design Collaborative (ADC), in close collaboration with luxury lifestyle clothing company Tommy Bahama, has transformed a tenant space and banal pedestrian walkway into a hotspot at the center of Fashion Valley shopping mall in San Diego, California. The once rectangular All Saints clothing retailer space had a corner carved away and opened to the public view, creating the opportunity to design a full-service Marlin Bar and ample outdoor seating areas. These gathering spaces punctuate the end of a line of storefront retail spaces and activate outdoor areas previously overlooked. Many elements within the existing retail space were simply removed or converted into an open and bright layout lush with décor emblematic of a costal island lifestyle. Moving beyond traditional retail spaces, ADC and Tommy Bahama aimed to integrate a quick service commercial kitchen into the design allowing patrons to combine their shopping and dining experiences at a single location. Patio umbrellas, TV’s, and patio lighting invite patrons to linger and dine within a relaxed environment embodied with the Tommy Bahama shopping brand and experience.
The challenge and investment required to convert a previous back-of-house storage space into a quick service commercial kitchen was immense. Commercial kitchens, even small operations, involve the extensive design and installation of mechanical, electrical, plumbing and communications systems. These systems allow for the operation of appliance demand large electrical and gas loads as well as manage and dispose of smoke, grease and other waste generated from cooking. Within this smaller area of work in the middle of an outdoor pedestrian mall, a new grease-waste interceptor and mechanical chase were built and installed to allow the kitchen to meet local and state building and health code compliance. Walk-in refrigerator and freezer spaces and their equipment was also installed for food and drink storage. Communications and information technology (IT) system were also integrated into the design to allow for staff communication and coordination between the kitchen, storage areas, drink station, host station and full-service bar. Each piece required cross coordination between ADC as the architect, the client and multiple engineering disciplines. The result merges a shopping and dining experience in step with the latest consumer preferences for multi-functional spaces breaking apart the rigor of traditional single tenant shopping mall environments.
